California Wonder (Simlaw)

California Wonder is a classic and highly popular variety of bell pepper, known for its large, blocky fruits and excellent flavor. The Simlaw Seeds version of California Wonder maintains the traditional characteristics of this beloved pepper, making it a favorite among both commercial growers and home gardeners. This variety is prized for its high yield, disease resistance, and versatility in culinary applications.

Features

  • California Wonder pepper plants are robust and bushy, typically reaching a height of 18-24 inches. They have a sturdy structure that supports the weight of the numerous fruits they produce.
  • The peppers are large, blocky, and four-lobed, typically measuring 4-5 inches in length and width. They mature from green to a bright red.
  • This variety matures in approximately 70-75 days from transplanting, making it a mid-season producer.
  • The fruits have a sweet, mild flavor and a crisp texture, making them ideal for a variety of culinary uses.
  • California Wonder is resistant to common pepper diseases such as tobacco mosaic virus and bacterial leaf spot, ensuring a healthy crop with minimal chemical intervention.

Application

  • Start seeds indoors 8-10 weeks before the last expected frost. Transplant seedlings outdoors when they are 6-8 weeks old and have developed several true leaves. Space plants 18-24 inches apart in rows spaced 24-36 inches apart.
  • California Wonder peppers prefer well-drained, fertile soil with a pH between 6.0 and 6.8. Incorporate compost or well-rotted manure into the soil before planting.
  • The plants require full sun, receiving at least 6-8 hours of direct sunlight daily. Water consistently, keeping the soil evenly moist but not waterlogged.
  • Apply a balanced fertilizer at planting and side-dress with a high-potassium fertilizer during the growing season to support vigorous growth and fruit production.
  • Monitor for common pests such as aphids, spider mites, and pepper maggots. Use organic pesticides, row covers, and crop rotation to manage pests and diseases.

Storage

  • Store California Wonder pepper seeds in a cool, dry place. Use airtight containers to protect from moisture and pests. Properly stored seeds can remain viable for up to five years.
  • Harvest peppers when they reach full size and have matured to their final color (green or red). Store fresh peppers in the refrigerator for up to two weeks. Place them in a plastic bag or container to retain moisture.
  • Peppers can be frozen, dried, or pickled for long-term storage. To freeze, wash and dry the peppers, then cut them into strips or dice them. Place in freezer bags and store in the freezer. Dried peppers can be stored in airtight containers, and pickled peppers can be stored in a cool, dark place for several months.
